About
I'm originally from Northern Idaho, but after finishing school I moved to Los Angeles to continue building my career in nutrition coaching and public education.
I grew up as an athletic kid. Multiple sports, lifting weights, pushing myself physically - that was normal for me. But when I started trying to "optimize" my health, I fell into the same trap many people do.
I went all in on restrictive diets. Carnivore. Low-carb. Fear of anything processed. If someone online said it was toxic, I avoided it. What I didn't realize at the time was that I was slowly building a damaged relationship with food.
That experience changed the direction of my life.
I decided to study nutrition formally so I could understand what was actually supported by evidence. I earned my bachelor's degree in Food and Nutrition from the University of Idaho while working as a personal trainer. I then completed my master's degree in Dietetics, while I worked as a nutrition counselor helping clients create sustainable, realistic change.
During graduate school, I began sharing what I was learning online under the name JacobFoods. What started as a small project grew into a platform with over 250,000 followers and more than 30 million monthly views.
My mission is simple: Cut through misinformation. Help people escape extreme, fear-based thinking around food. Promote a balanced lifestyle that supports both physical health and mental well-being.
I am currently an RD2B and eligible to sit for the Registered Dietitian credentialing exam.
